Combined partnership for the control of Salmonella in the Canadian Poultry Industry

The continuously increasing Food Safety standards require continuous process improvements by food processors. With the introduction of the new Canadian Poultry Performance Standards, Canadian Poultry Processors are now encountering challenges similar to those faced by Poultry Processors in the United States. But, how can the industry keep up to meet these lifting standards?

Improving your Food Safety Management program, the natural way

Within the wide range of different interventions to increase food safety, a commonly adapted strategy by processors is the Multi-Hurdle, Multi-Technology Approach. This involves combining known interventions in a smart way to combat Foodborne Pathogens such as Salmonella. This approach started to gain popularity among Food Processors in Canada, especially since the introduction of the Canadian Poultry Performance Standards for Raw Chicken Parts. This is partly due to the solution being effective against all Salmonella serovars, without affecting any Organoleptic Properties.

The United States has gained experience with phages over the past 10 years, and it became a popular and widely used intervention tool ever since the USDA introduced the US Poultry Performance standards, combined with chicken and turkey categorization. The scientifically proven efficacy of our phage solutions in combination with the absence of negative effects such as impact on color, texture, odor and taste of foods treated, increased the popularity of this intervention.
