High throughput slicers have transformed deli meat production. These intricate machines come with many nooks and crannies and are difficult to keep clean. A leading producer of sliced deli meats in Australia protects its slicing operations with Phageguard L (PGL). Nozzles are placed at the front and back of the blade to prevent contamination of Listeria from one slice to the next. Built up protein debris does not harbour Listeria as it is laced with Phageguard L (PGL). Since running on PGL this producer is yet to find a product positive for Listeria.
